Traditional Balsamic Vinegar

Traditional Balsamic Vinegar of Modena P.D.O., also known as ‘Black Gold’, is created through the long and natural ageing of cooked must from typical Modenese grapes inside barrels made of different woods.

The entire production process, from growing the grapes, processing them, ageing and bottling, must take place exclusively within the province of Modena.
The vinegar has a deep, dark brown colour and manifests its density in a correct, flowing syrupiness. It is obtained from cooked grape must, matured by slow acetification, derived from natural fermentation and progressive concentration. Then it must undergo a very long ageing process in a series of vats (casks) of different sizes and woods, without any added aromatic substances. It is characterised by a complex, penetrating aroma and harmonious acidity.
It has a traditional and inimitable sweet and sour flavour well balanced. It is savoury with nuances of flavour, in harmony with its olfactory characteristics. It is an extraordinary dressing for many dishes and can also be enjoyed purely with Parmigiano Reggiano cheese, strawberries, fiordilatte or cream ice cream, for example;

It is also excellent as a special decorative element in some first and second courses. It enriches and ennobles the taste of fresh or cooked vegetables.
